Vegan Recipes Eggplant Fries: Alternative to eating Potatoes



If you are someone who loves eating French fries, but you can’t afford to take in starch on a daily basis, then this recipe is for you.  This very easy and simple recipe will satisfy you as well as your little ones. Even your children will love the taste of this potato alternative. 

Today I will share one of my favorite quick and tasty vegan recipes. Hold on to your hats, the recipe of the day is Eggplant Fries. Below you can find the ingredients that you will need to get this party started. 







Eggplant Fries


Ingredients: 

·         3 eggplants
·         1 cup Flour
·         1 cup Cornmeal
·         1 tsp salt
·         2 tbsp cayenne pepper
·         2 tbsp oregano
·         2 tbsp smoked paprika
·         2 tbsp pepper
·         2 tbsp basil
·         2 tbsp garlic
·         2 tbsp onion power
·         Cup of water
·         Olive Oil for frying

Step 1: Cut all three eggplants into wedge type slices.

Step 2: Take 1 cup of flour and mix in a bowl with the 1 cup of cornmeal.

Step 3: Add all of the above listed seasonings to the flour cornmeal mix.  

Step 4: Do the exact same thing in another bowl. 

Step 5: To the first bowl of dry ingredients, add water to the mixture until the consistency is like a pancake     mix. This is part of the batter mixture that you will dip your eggplant into. 

Step 6: Take an eggplant wedge slice and dip in the wet mixture then dip it into the dry flour/cornmeal mix. Do each and every eggplant wedge the same way. 

Step 7: Once they are all done, heat your olive oil in a pan, or whatever type of oil you choose. 

Step 8: Let the oil heat up.

Step 9: Place the wedges into the hot oil. And let cook on both sides for 4 minutes each. 

Step 10: Once done, remove and let drain on a paper towel.

Step 11: You may bake them for 10 more minutes if you choose to. 

This vegan recipe tastes absolutely delicious! I usually serve these on the side with my homemade tomato spaghetti sauce.
